The Authenticity of Alfredo Sauce

While the market it bursting at the seams with a wide variety of different Alfredo sauces, ranging from garlic and herb to sundried tomatoes, sometimes staying with the basics is all you need. With minimal ingredients, you can create an authentic Alfredo sauce that will most certainly be a staple in your future Alfredo desires.

Shrimp Alfredo

Ingredients

  • 3 Servings of Fettuccini (See Recipe Here for Homemade!)
  • 6 Cups Water
  • 2 cups Freshly Grated Parmesan Cheese
  • 1 1/2 Cup Deveined and Peeled Shrimp
  • 1/2 Cup Butter
  • 1 1/2 Tsp Salt
  • 1 Tsp Freshly Chopped Dill
  • 1 Tsp Cracked Black Pepper
  • 1 1/2 Cup Hot Pasta Water
  • 1 Tbs Lemon Zest
  • 2 Tbs Lemon Juice
  • 1 Tbs Fresh Chopped Parsley
  • 1 Tsp Olive Oil

Preparation

Pasta:

  • In a large pot, combine Water, Olive Oil, and 1/2 Salt and bring to a boil
  • For fresh pasta, you only need to cook for roughly 6 minutes or until pasta is tender
  • For boxed pasta, follow the cook times provided on the package
  • Put aside 1 1/5 cup of the Hot Pasta Water
  • Drain the remaining water from the pasta


Sauce:

  • In a medium sauce pan, melt a little over 1/2 of the Butter
  • Add in the Hot Pasta Water and Freshley Grated Parmesan Cheese and stir
  • Add in the remaining Salt and continue to stir
  • Let cook until sauce thickens and becomes creamy, ensure all the cheese has properly melted and incorporated into the sauce. 


Shrimp:

  • In a frying pan, on medium heat, add the remaining Butter and let melt
  • Place in the Shrimp, adding the Lemon Zest, Lemon Juice, and Dill
  • Cook Shirmp evenly on both sides for roughly 3 - 4 minutes, or until shrimp is pink in color. Overcooking the shrimp will cause them to shrink and curl undesirably.

Finishing Touches

  • In the large boiling pot, combine the cooked Shrimp and Alfredo Sauce in with the Pasta until all the ingredients are well mixed
  • On a plate, add one serving of the combined ingredients
  • Add a dash of Cracked Black Pepper over top
  • Lastly, sprinkle the Fresh Chopped Parsley over top and serve!
