Alla Vodka Meatloaf

A unique twist on your standard meatloaf that may change the way you make it for next time. With a savory alla vodka sauce and a robust meaty base, this dish will surely spark joy at the dinner table!

The Same Old Thing

As anyone else who has had their fair share of meatloaf throughout the years, the taste just never seemed to change. So one night while looking through my cabinets, I had all the makings for a pretty basic meatloaf. I decided to add a bit of a twist to it that yielded rather surprising results! Now, I would like to share it with you!

Alla Vodka Meatloaf

Ingredients

  • 2 lbs Ground Beef
  • 2 Large Eggs
  • 1 Cup Breadcrumbs
  • 1/2 Cup Milk
  • 1/4 Cup Parmesan (Freshly Grated)
  • 1/2 Yellow Onion (Finely Diced)
  • 2 Tbs Alla Vodka Sauce
  • 2 Tbs Parsley (Freshly Chopped)
  • 1 Tsp Oregano
  • 1 Tsp Crushed Red Pepper
  • 1 Clove Garlic (Minced)
  • 1 Tsp Paprika (Preferably Smoked)
  • 1 Tsp Basil (Freshly Chopped)
  • 1 Tsp Sage (Freshly Chopped)
  • 1 Tsp Rosemary (Freshly Chopped)
  • 1 Tsp Salt
  • 1/2 Tsp Cracked Pepper
  • 1 Tsp Butter


Topping Sauce

  • 1/2 Cup Alla Vodka Sauce

Preparation

  • Preheat oven to 350°(f). 


  • Lightly coat a bread pan with non-stick cooking spray or oil.


  • In a small pan, melt butter and sautee diced onions for 3 - 5 minutes of until tender, stirring occasionally.


  • In a medium bowl, combine the ground beef, eggs, milk, and breadcrumbs.


  • Allow time for the breadcrumbs to absorb. (About 5 minutes)


  • Add the Cooked Onions, (2 Tbs) Alla Vodka Sauce, Oregano, Crushed Red Pepper, Garlic, Paprika, Basil, Sage, Rosemary, Salt, and Pepper and mix until all ingredients are evenly incorporated.


  • Add the Meat Mixture to the bread pan and form a loaf.


  • Bake for 50 minutes.


  • Add the remaining Alla Vodka Sauce over top of the Meatloaf and bake for an additional 5 - 10 minutes or until internal temp reaches 160⁰(f)

Finishing Touches

  • Remove from oven and garnish the top with Parmesan and Parsley
